If you are going to TIG you need the best fit up you can get. 10 mins spent improving the cut is 20 minutes less welding time. Less gas, less filler, less annoyance.
The grinding wheel will decrease more quickly in diameter as its diameter reduces, so that isn't going to be constant.
Regarding your method, it should go through like a hot knife through butter, try moving the work so its on the leading edge of the disc when the cut begins.
