Bacon sandwich…

Me and the good lady normally have a feast on that ‘special’ day and feel gross and uncomfortable for the rest of the day.
This year we said bigger it and we are going really simple.
A good old bacon sandwich and a nice pudding.
The question is..
What is your favourite bread for the sandwich and what is your favourite cut of bacon??
And how do you cook your bacon??
I have a idea of how I’m going but be interesting to here everyone else ideas..

Thick white for the bread, no idea about cuts of bacon. I always grill bacon, though I'm told it loses something that way. I expect there's all sorts of expensive strange-shaped bread that might be better, but I've recently discovered the Roberts Mega Thick Soft White loaf and that makes a nice sandwich. A couple of rashers, and a slice of black pudding distributed around makes a sandwich that's almost too thick to eat comfortably. Almost.

A bacon sandwich alone is not complete, there has to be a snotty egg thrown in the mix.

Rindless back bacon from the local farm shop, grilled so the remaining rind is browned in a buttered (butter not some imitation) oven bottom bun, again from the farm shop.
Extras depend on mood but brown sauce or black pudding with tinned tomatoes. Mushrooms if the wife gets to pick.

Home made bread from the bread maker. Bacon has long been a disappointment - covered in white scum, full of water and sticks to even the best non-stick pans. I’ve just discovered that cooking it in the air fryer makes it palatable (not had an air fryer very long so still learning).
When I was out in Australia last, they have bacon called Spek (I think) which comes as an uncut ‘slab’ - you just slice off a couple of rashers and cook it in the frying pan with no scum or water whatsoever. Nothing like the rubbish that the supermarkets in the U.K. sell.

I hate you all, I had to give up my favourite streaky bacon breakfast due to high cholesterol. I am managing it through diet change as I don't want to go the statins route

Ayrshire back bacon from the butcher on crusty white bread still warm from the oven/breadmaker with fresh butter and two soft yolk butter fried eggs (local hand reared free range hens).

Speck can refer to a number of European cured pork products, typically salted and air-cured and often lightly smoked but not cooked. I'm think Lidl and Tesco do it in the speciality bit, although it'll probably be pricy compared to bacon and not a patch on the proper stuff.

It's a bit like Parma or Serrano ham, which makes a lovely sandwich if you grill it to crisp it up and slap if between a couple of bits of white bread.

Yes, throw the piece of cardboard masquerading as bacon in the bin once all the white scum and wee bit of fat has seeped out of its pores. Cook the scum gently and once scraped off the pan tastes far better than the "bacon".

Crusty white bread - three rashers per sandwich - no butter - dip bread in frying pan to moisten it - leave fat on bacon (smoked back bacon from local butchers).


Better option: Dried end of butchers roasted gammon joint/sliced and fried with runny eggs... Plate, knife and fork and use the bread to mop up the wet egg and fat.

On the big day I’d fire up the bbq and lightly toast some door stop slices off a sourdough loaf, as well as cooking the main event. Serve on the buttered softly toasted bread and sauce of your choice, my go to is brown sauce

Serve with an ice cold Leffe Blonde
