Anyone in the business? We’d prefer secondhand but scouring marketplace etc isn’t turning up what Mrs W wants.

Maybe ask at your local scrap metal yards? One near me puts odd / interesting / useful scrap out on display and sells it at a reasonable price. They had some decent stainless catering shelving & racking there last year...
Edit: How large does it have to be? I've fitted a couple of "double sink + drainer" unit into larger kitchens, they often give much more bench space than a standard "sink + drainer".
So just to reiterate - we’ve tried the usual places for used stuff and it’s not happening. I just wanted to reach out and see if there are any forum members who are this industry.
your best bet is to look at the commercial kitchen stuff thats available and decide what your after to what your mrs is wanting
that stuff is not cheap not even in the second hand market
to a degree ask and draw what your mrs is after they maybe something that is close enough to what she is after and sometimes to a degree it maybe wiser to make it yourself

Drive around any local sheet metal fabricators or ductwork suppliers. A lot of their output goes into commercial kitchens so they might have some contacts.
Archway Sheet Metal Works are a well-known supplier, but only for new.
Commercial sinks have metric plugholes on them so you need an adaptor (McAlpine) to connect a standard 1 1/2" BSP trap.
