They haven't blocked other browsers, but have made the process of switching away from Edge more complicated. This is pretty crummy, to be honest, and I wouldn't be at all surprised if the EU forced them to simplify this again so it feels like an unforced own goal.

No it won't. There's no functionality in Windows that informs Edge of which sites you're visiting in other tools (and why would it?)
Not entirely true. I think what you're getting is that there are multiple places and filetypes that need to be configured in order to use an alternate browser. It's a pain, but not impossible or hard to change these (and the article I linked to does a decent job of explaining how to do it)
