As @MattF said.
The jaws, the handle, the screw thread and the top of the movable jaw leave un painted.
You may find some machined rubbing faces on the fixed jaw, they should not be painted.

Clear coat will be suitable for those bits.

If you have a sudden rush to the brain, the Raised lettering can be picked out in a different colour.
Or gold leaf.

The Woden shows the un painted parts.
Gold leaf will show up any casting flaws.

I did consider picking out the lettering in gold Humbrol.

I’m not going for museum level restoration nor doing it for sale, just looking to do a sympathetic restoration with some maintained patina that I’m happy to put my name to, so if I break with what is technically correct it’s not the end of the world.

Good god no, that's no problem whatsoever. Absolutely upto you how you do it. A quick photo of four of mine:



One at rear left corner is coated with shoe polish, the black one is coated with graphite wax, other two painted etc.

Whatever floats your boat goes.

I did consider using the blacking I use on our log burner, but it might get messy and there’s something very charming and English about that Roundal Blue.

There is/was a vice in a local diving lake.
In glow in the dark yellow. It was working when I used to dive. It was lubbed with tallow
