AN3 stainless braided hose fitting query

I need to join two lengths of AN3 stainless braided hose together and have purchased (unsuprisingly) male and female hose fittings. These are the parts:

I just blithely thought that I would screw the male fitting into the female fitting, and that would be that, but when the female fitting arrived, the package included a brass olive (or more accurately a cross between a mushroom and an olive). This part can be seen if you look closely at the picture that accompanies the eBay listing for the female fitting. Do I use the brass olive/mushroom, or assemble the fitting without? Will the fitting seal on the conical faces or do I need the brass olive/mushroom to make the seal?

Conical seats don’t normally have anything , that’s the point.

So basically don't bother with the brass bit and just assemble concave to convex face?

If it’s ptfe lined you use the olive. In essence, put nut over braid, then splay the braid out at the end. Put olive over liner , then screw the fitting together. A handy tip when setting fittings is to put tape round the bottom of the nut on the hose itself, that way you can see if instead of pulling the fitting together it’s pulling the nut up

The female fitting has two olives supplied - one is the 'normal' one that sits between ptfe liner and braid, the other one doesn't touch the ptfe braid, it interposes between male and female fitting. That's the one that has me confused. Do I use it or not?

I'm guessing the mushroom olive is for is you're fitting the coupling to a double (female) flared brake pipe.
As you're male coupling is the equivalent of a single (male) flare, you shouldn't need it.

inverted flare on male fittings. So they have supplied a bit to go in the female fitting to change the flare, in the past I had to make those bits myself.

Isn't a bit of hose cheaper than 2 fittings?

OK, well I shall make sure to keep it in my box of hose fittings. I'm sure it will come in useful one day.

As for cost of hose vs. fittings - I belatedly realised that after I'd bought the fittings...
