I bought the OJ car from Odgie,
he had just lost his workshop so OJ car was parked in his Dad's backyard, next the greenhouse.
Some of his other creations are worth having a look at.

I'll have to stick my oar in and suggest (given the scarcity of CX500 engines) either the ST1100 or ST1300 V4s.
Compact, driveshaft exits pointing backwards so ideal for a RWD car. The 1100 is carburetted while the 1300 is injected so you'd need all the electronics.
I forget the 1100's rated output (100bhp?) but the 13 was usually claimed to be 117BHP and about 85 lb.ft. with a torque curve flatter than Keira Knightley.
Either has 5 gears and can be bought for a few hundred quid (but watch the shysters who strip the 1300's Denso alternator off as they can fetch a chunk by themselves).
It has been done of course; here's an 1100 (incorrectly captioned on Google as a 1300) in a Seven-style car:
A crash-damaged complete ST1300 sold last week on Motomine (ebay) for £600-odd quid, mostly bodywork/front forks but the engine will be fine (mine came the same way), they have a tipover switch that kills the engine if the bike falls over. My last one had done just shy of 80K miles when I sold it.

They all suffer the same problem. Too tall a 2st gear and too short in top (if you want good get-away and use all the power).
I'd go with BMW R1100 engine. Simple fuel injection with only 1 sensor in the airbox the rest on the engine, proper clutch and bell-housing fitment, 95hp and fairly compact. Great spread of torque. Buy the whole bike for less than a grand and you got everything you need.
