Over 3000psi because they're used quite frequently on JCB implements and so on. My 2CX has them for the third function on the loader and that's running up at 230bar.Don't know the pressure that they take, but I suspect they would work.
Claw fittings are the only ones I've seen.Road compressors often have claw fittings bigger than 3/4".
I'd expect a valve and claw-type coupling to be easier to live with day-to-day in most cases.
A valve on its own will not allow you to disconnect the line easily. The valve only shuts off the supply. To disconnect, you then have to depressurise the line.

Yes ^^^^ I installed new washers, and now need 12" pliers to twist them on & off.Don’t underestimate the force needed to couple a claw fitting if its rubber seal is fairly new. AMHIK
Ive seen one break away…..its not pleasant, hence why crows foot connectors are banned in some industries.The claws are easily rotated/disconnected, worth fitting tethers. If one ever breaks loose they can cause injury. I have a few large quick release couplings here, I will check the bore size.
