I'd set up a router fence to ensure a neat line, then sink it in, bead of quality silicone, its not going anywhere in my opinion. Assuming in use its not under any significant load with large cauldrons of boiling liquid. 10mm or so will be plenty of meat to support whatever weight you put on it...
