I'm accepting physically I'll struggle to build the intended new 10' x 8' workshop / shed out of scaffolding, KeeKlamps & Unistrut so have found a local wooden version that is ideal. It's heavy duty construction and has a 3" x 2" frame so the intention is to insulate and then fully line insides before applying a couple of coats of paint so wipe cleanable.
Question therefore what is the best, cost effective, material to use for the lining ?

I relaid the bathroom floor with it before I was taken ill. The flat roof then burst and for several years it was flooded with water running down the walls then over floor until it seeped down into kitchen below every time it rained. Total disaster but mental health issues and physical problems plus total lack of money to repair meant it got left that way. Eventually managed to get my head sorted and afford new fibreglass flat roof but was surprised to find bathroom green chipboard had survived with no lasting effects so have no qualms about using it for lining a shed. The plasterboard dry lining on the studded wall has deteriated and timber rotted !
