Yes, it is possible to 'sandbox' a system, so that anything malicious is contained; again, a smart thing to do, if you're unsure about what may happen.

I have an air gapped laptop I use for PLC programming, stops any updates breaking things etc

but also... I'd just plug it into office pc for the convenience

We had a variation of that at one place I worked, an unknown USB drive wouldn't work until you'd taken it to the IT guy who would check it and register on the works system, I think using the MAC address.

External devices aren’t allowed on any of our computers. Even if you ask they won’t let you use anything.
