I am pretty sure this is still current many moons ago I used to drive 7.5 tonners on a car licence wit c1 entitlement , the company even got around it with a bit of cheating on two 17t removal wagons they had the body and tail lift removed chassis cab's plated at 3.5t and then the body /tail lift put back on as long as weren't more than 7.5 when pulled we were good to go and on a car license . We used to move lots of big cold rooms in kit form very large but no weight .

im going to ask what is your framing do you have a photo of it
what length and width are you playing with
the most important one what height are you playing with
will you be fitting solar a roof rack
id also like to know what height off the floor is the base frame theres 2 points at the rear and at back of the cab

remember if using it in France and Europe you need to be under 4 Metres in height as most bridges are 4 metre

I was going to say this too. I can drive 7.5ton on my licence too. I've only done a car test. Occasionally hire a 7.5 when I need to move stuff and they accept my licence fine

I would buy a Funkkabine sometimes known as a BW Shelter. Alloy skin,insulated,wired for lights and sockets. Mine weighs 500kg.

to be clear here the framework has advantages with storage
water storage, toilet- shower water storage, battery storage for solar
now if you make your own shower tray using grp you can have step down shower cubicle ( as your stepping down between the lorry frame ) with folding doors makes the whole unit sealable that means full height shower
also you can use premade galvanised frame work to support the extras as you have plenty of spare space for storage within the lorrys framework
