Mashed spuds are for sausages and onion gravy...

Roast potatoes - no pre boiling - peel and cut small - stab with knife - salt and drizzle with olive oil - cook fast and hot - 220 degrees celsius - top shelf of fan oven - turn at 20mins - wet with loads of oil - done at 40mins (ish).

Fast and hot - small sections with potatoes - too little oil and too big of section of potato is your probem...

What you after is a better version of a chip - so treat them like an "executive chip" - loads of oil/small sections/fast and hot...

That's how I make oven chips, preferably with Charlotte potatoes but for roast potatoes I pretty much do the exact opposite of that. Boil until just going soft, drain and steam in the pan. Just enough Vegetable(rapeseed) oil to coat, salt and pepper in the pan, tip out on to a lightly oiled preheated tray and cook for 40-60 minutes at 200c. do not turn as I like the different parts, the bottom will have a darker thicker crust and the tops will have a lighter thinner crust. The result does vary with potato variety and the different bags of the same variety, some won't boil for long before falling apart.
