It's the keeping them back that's worrying me as this van has an electric handbrake! I don't what the pistons clamping my fingers!

I'm not too sure but the electric bit is what holds the brake off, and a big spring puts it on when the electric is cut. Google or Youtube will probably be more forthcoming, as it will be no different than just fitting new brake pads.
The 'electric bit', is a motor that winds the brakes on, and off. There is no spring involved.
IIRC these vans need a computer to wind the calipers off, but it was sometime last year I last did a set on one with an electric handbrake.
Be careful with the Electric Handbrake, there will be a way to put then in service mode.
Quite a few people have managed to wreck EPB calipers and they are not cheap to replace!.
My Mintex pads came with a rubberised backing fitted that you peel the top off before fittng. Seen the same on Bosch pads.
Not a fan personally off back buttering the pads with anything as it just leaves a mess imho.

That's the problem, I've had a Google and can't find anything useful on how to do that!
Not a good idea on anything with ABS fitted. You are better cracking open the caliper bleed nipple & let the fluid out that way as you push in the piston.

I guess things have moved on a bit since I last did amy sort of work on a modern car. The newest vehicle I've ever done any work to was a Rover 800 I bought 20 years ago, second hand, it had ABS and I remember replacing the front discs and pads myself once without any dramas.
Next car I bought was a 2012 Mondeo, still got it, but I don't touch anything on that apart from the fuel filler cap, I leave it all to the garage.
Some cars have a series of button and brake pedal presses to activate it.
A garage will normally use diagnostics tool.
What people come up with this rubbish?
There is no issue pushing fluid back through an ABS system, provided you're not doing something stupid.
It is highly inadvisable by many vehicle manufacturers, including Citroen regarding my van!
My thoughts are that even though you might not damage something in the ABS pump it's not a good idea to force the sometimes dirty contaminated fluid from the brake caliper back in through the precision innards of an expensive ABS pump!
It's also a lot easier to squirt the fluid from the caliper rather than having to suck excess fluid from the reservoir, especially if you're working under a car lift!
I happened to check the official brake pad renewal procedures for various Stelantis vehicles last year, and there was no such advise in ServiceBox (Stellantis's online tech info)

Unless you've added brake fluid to your reservoir since the pads were installed new you shouldn't need to take any out. Your pads should reach their service limit long before your fluid level gets too low.
I know some people do regularly top up their brake fluid, to the full mark, but that just makes more mess when it's time for new pads.
But that's for old fashioned normal vehicles, I have no idea what skullduggery and alarms and oddball stuff goes on with the modern computer controlled stuff.
Since I was bored earlier waiting for my employer's hamster to wake up and get running on the wheel so I could do something productive on the computer, I re-checked the three current Stellantis commercial vehicles.
Two newest models (combo/berlingo/partner/doblo and vivaro/dispatch/expert/scudo) mentioned to ensure you use a clean syringe to ensure there is sufficient space in the reservoir, and the oldest model (Movano/Relay/Boxer/Ducato) simply mentioned to monitor the fluid level.
All listed various tools for pushing pistons back with no mention of opening bleed nipples.
And to really upset those criticising lack of grease, the rear pad instructions for a Combo/Partner with electric handbrake, stipulated calipers and carriers should be cleaned with a suitable brake cleaner, and pads fitted dry with no lubrication on any surface. It did mention three anti-noise shims.
Also it says diagnostic equipment is required to wind back the calipers, with no other method listed (the generic tech data also states the same).
