What about a Surf?
3.0L 4 cylinder diesel lump, auto and low range box and locking center diff will get you out of most holes. It's basically a rebodied Land Cruiser 90. Tax is less than £300 a year. Get a 3rd gen from 96 onwards as they had a big upgrade then. Mine has very little rust and has pasted all it's MOT's for the 8 years I've had it.
Check it's registed as a private vehicle as some got registered as a light goods vehicles. They can take some weight!
Good fun to drive and comfortable too!
I get around 360 miles to a tank of diesel and they will run on veg oil with no modifications...

You get less to a tank of diesel than I get from my 3.9 v8 disco 1… that’s mental+1 for the Surf - I had a Japanese import '93 2nd gen 2.4. Low mileage rot free. Would definitely recommend the 3L and if you can get something freshly imported spend some time with rust prevention - be wary of an old second hand imports as Japanese domestic rust proofing wasn't up to much!

Maybe when you do it ,,, Mine is usually invisible , at least as good as new and usually better , properly treated and undersealed , inside cavities done with acf 50 and rubber bungs put in place so it can be done again in a couple of years , I dig out all the mud I can and blow the gathered debris out of the holes too .You'll still be doing that anyway. If it's got to the stage of needing significant welding, that's the start not the end of it. Mot welding is generally a lash up, to get the minimum for the test
A lad I used to work with had one he was spending the same as my old 4.2 v8 each week in fuel but didn’t have that sound track or ability to set car alarms offSo it's quite a bit bigger tank, maybe the Surf isn't so bad on fuel then!
On a long run coming back from LeMans and late for the ferry it did about 25mpg, we had 4 of us in the truck with all the camping gear it was a very hot day and we didn't often drop below 90mph, sometimes up to a ton! Made it with about 10 minutes to spare
I think its how most garages do it - the customer simply wants an MOT - so most places, they simply oblige. Plate over, plaster some underseal on the outside, hand it back with certificate.Maybe when you do it ,,,

Audi allroads ,,, galved from the factory etc , better ground clearance than a range rover mine has well over 200k on it , and is nicer underneath than it is ontop , paints faded now and the interior is showing its age , but Ive used it as a van for ten years , welding gear , diving gear and a lot of gardening too , still got the original exhaust etc , not without its problems , but all sorted out relatively easily , Its now running a second hand range rover air pump for the suspension and a bag piping andy piston ring in it and its happy .
I always check regs, can make amusing reading when stuck in a car park somewhere!My go to prior to buying any truck is DVLA`s mot history checker, I wont buy anything with a history of corrosion advisories or repairs. There are normally more than enough jobs to do on a second hand truck without chasing tinworm about.
