100m is the max length for poe... but that's the max length in the spec so you should be able to go a bit longer without problems - you can defenatly go longer for just data (without power) so you can always have the furthest away ones plugged in
no experience with the system you linked to, but I'd go with a known / name brand one... 1080p is somewhere between 2mp and 3mp... which isn't much
how big of an area do you want to watch? the bigger the area the better quality you need, imagine having a camera watching your door from the inside... anyone walking in will be half the picture so you'll get a good shot of them.... if the same camera is watching a whole yard then that same person will be a tiny part of the picture so even zoomed in you can't really pick out their features
how many cameras do you need? you can cheat a bit, have one camera watching the whole yard so you can see what's going on then have other cameras zoomed in on smaller areas... I've got 1 camera watching my yard then another zoomed right in on the gate, so get a good shot of anyone looking through the gate
I'd want 4mp minimum for cameras now - I'm using 8mp minimum and (when I get round to it) swapping mine out for 8mp cameras
how many cameras do you need? I'll find you a few links to look at etc.
EDIT: looked again at the one you linked, it's not an IP system, it's old coax cables.... you really need an IP system (digital vs analogue)
there's exceptions, but mostly the analogue systems lie about the quality - they list a higher quality than you can actually send down a coax cable
you'd need to run separate 12v to each camera too
