A Desert Sandwich...….

Slices of bread lightly buttered, covered with strawberry jam, a layer of whipped cream, topped with sliced bananas and covered with another slice of bread.
My mother used to make this when I was young, and would often cut the sandwiches into soldiers. A great treat on a hot day.

Make it with sweetened eggy bread (French toast)

Breakfast American pancakes - these are a regular for the daughter and I - dead easy to remember the recipe!
Use an American size "cup" - 240ml

1 cup of Self Raising flour
1 Egg
1 cup of milk
1 pinch of salt
1 pear (works best)/apple/ other fruit/berries

Mix flour, salt,egg and milk until smooth ish
Grate in pear or whatever and mix

Dollop to size in a hot pan, flip when the bubbles start to burst.

Serve topped with yoghurt and/or maple syrup and/or butter and/or more fruit

Tartiflette - reminds me of ski holidays in the Haute Savoie
Layers of sliced potato and onion/lardon mixture, stuck together with creme fraiche and white wine, all topped with Reblochon cheese and oven baked until bubbling

sounds like the best potato gratin

My potatoe gratin with Maris pipers, infact that’s nearly always what I use for everything
I cut bacon down to small cubes fry it in butter until it’s cooked normally not crispy or it will charcoal once in the oven and apart from the chestnuts in the recipe below I use grated mozzarella with lid of cracked black pepper on the top

pair it with a nice steak and some green beans and homemade pepper corn sauce and tomatoes cooked in balsamic vinegar baked in the oven and life’s good

add gravy to your peppercorn sauce and it’s the best

Bacon and potato in a pan

Good Bacon (dry cured best but not essential)
2 Onions
Potatoes ( I like a mix of desiree and maris piper but any will do)

Fry bacon in the pan to render some of the fat, then remove to a plate.
Fry one onion till browned.
Add the potatoes in layer.
Add the raw onion in another layer.
Top off with the bacon.
Cover the potatoes with water. (you can add oxo cube if you want).
Boil till potatoes are cooked.
Put on plate and scoff with a door stop of proper bread with proper butter.
Adjust seasoning depending on the saltiness of the bacon.

Do not mess about with the recipe no need to thicken the broth as it ruins it. Simple peasant meal, quick to do, best eaten on a cold, damp, grey day when you've had a trying day.
If you're health conscious open a tin of peas

For tartiflette you need waxy potatoes like Charlotte as you have to cook them fully then cut into 6mm slices for layering up.
