Looks like I am going to have to brush up my hand coding. All the website builders use reams of Javascript and I'm not having that.

JQuery and JQueryUI are perfectly decent libraries that allow you to do some decent and clean DOM manipulation.
HTML5/CSS/JQuery is the standard these days I'm afraid. Depends if you need any client side validation and/or DOM manipulation. It's 100% better than the alternatives.
It doesn't need to be hand coded. Just a decent, clean and simple Wordpress theme would do the trick. A website is all about the content anyway. All the code does is deliver the content to the visitor. Do the content, and then work out the best solution to deliver it. Building a site and then filling it with content is putting the cart before the horse.

on another point here it would be way better to create new pics and use some older ones to a degree

I would think they are contractually limited and it would not be possible to move the site to a new host, so backups will be of little use. Most of the free site builders let you build a very basic site, try to convince you to pay for more features, and don't allow you to move the site away from their hosting; that's their business model.

In the interim, how do I point the domain at the Booking.com site? The form needs an IP address, but it doesn't resolve to anything useful, only the main server with all their sites.

yes i have that myself but its a new name new site with the available pics or more so a new update of the pics showing the actual place as it stands in this time
many sites fail due to old used photos that dont portray how the site is now its worth updating these pics
yes you can have an archive of pics over the years showing the property and events held on the site
bbq events, party events anything really

I doubt you'll be able to put anything other than an IP address in the A record field.
You need a more 'user facing' domain management page where you can redirect it to another URL. I know you can do it in FastHosts

just a note here if the site becomes aware of the forwarding address they can and will put the site under full lock down conditions
no access, no copy of the site
best off getting what you can and go from there

Ii think the key is most of us used to hear the words SEO and shudder knowing nothing about it. But getting bombarded with emails who said they could at a cost.. But never knowing the truth.
I once knew a woman who had a website at the top of Google who claimed it was all about her expertise but they could not run the business correctly so I was not convinced... Lol
Then we get told its now about how much you pay Google..
Irritates you... Totally bamboozles me.
Anyone who is a true SEO expert doesn't email you offering SEO services. In fact, most SEO experts will be too busy ranking their own money sites to be messing about with clients.
If you are paying Google, it's Adwords, not organic search.
