Do you want a scroll saw mate.Should have made myself clearer. I want to have a go at making a scrol saw type machine. I want to disable the inbuilt switch and speed control (or tape it up so it’s always on) and have an external rotary speed control

Depends on the type of motor surely?

If it's got a commutator and field coils it's a universal motor and will work on AC or DC, if it's got a commutator and a permanent magnet it's DC only, but you may get away with AC, if it doesn't have a commutator then it's an AC induction motor or some fancy electronically controlled one.
A basic SCR/Triac speed controller will work with a universal motor, a DC motor will be best with a pulse width modulated (PWM) controller and an indudtion motor will require a variable frequency drive (VFD). The other fancy motors will usually have their own control circuits.
Some close-up photos of the internals of the motor will help.
