Acorn to Arabella; long running wooden ship project.
Adam Savage's Tested; They've tried being a tech channel (Just called "Tested") but it didn't really work out so they renamed it and it's a lot more focused on prop making in Adam's man cave.
Laura Kampf; just generally making stuff, well produced videos too which is nice.
Simone Gertz; she makes "****ty robots", her words not mine .
Marco Reps; Electronics stuff, a lot of reviews of "Banggood" crap but it's worth it for the other videos.
I think most of the good engineering related ones have been mentioned so I'll go off topic a bit, The slow mo guys, Alex French Guy Cooking and Mike Boyd.
