Any machining job is always all about setup. Something I have discovered over the years, the better I get, the longer it takes. Another way to look at it; the longer I take the better it gets.

I can see how setting the workpiece in the chuck after using the chuck to centre the drillbit works, I just can't understand why that would be better than conventional drilling if you take the same care in setting up

Its neither better or worse, just a YouTube video of someone's opinion.

Not the way I'd do it but it works and helps others to achieve results.

I assume for the same reasons that when you drill a hole in the lathe you mount the part in the chuck and keep the drill fixed and not the other way round?

It doesn’t make a difference which way round you do it the rules of engagement are exactly the same.
Set up incorrectly the drill bit can wonder off whether the jobs in the chuck or the vice.
The reason it’s easier in a lathe is because a lathe is a solid accurate tool with a head and a tail stock perfectly aligned. You could do it the other way round in a lathe and it would work just as well so long as you clocked your drill bit in the chuck to run true. Bottom line your bringing the two items together and so long as they are perfectly aligned it shouldn’t make a difference which one is stationary and which one is turning

No, I don't think it makes the slightest difference. Either the workpiece is aligned correctly with the drill or it is not. Which one of them is spinning is neither here nor there. The only issue being the user will (with this process) be spending additional time setting up things up. I suggest if you spent that time and effort setting it up properly in the first place you could easily achieve exactly the same results by conventional means.
