A Dowty washer. Viscosity of 46 tends to be the norm in the UK including offshore/marine, but for really cold and depending on the system you could drop to 32. (Shell tellus 46 or 32)
That looks like incompatible fittings to me. Looks like porto power push in valved connector. What you need is the correct threaded fitting. Take it to a hydraulic shop, they will sort you out.

What kind of washer would you fit on this? Also what would be a general purpose hydraulic fluid to use? It may be outside in the cold.
Thanks

Dont go near any of my hydraulics then!!Dowty washers work fine as long as the pressure is internal. The pressure pushes the rubber to create a seal, it doesn’t rely on threads pushing the rubber from inside, the pressure does this. I guess if it’s a concern you could use a fibre washer, but personally I’d have a Dowty in there.

Bruce I would say at a guess that the fitting on the red cylinder is just a common portapower type female couple which will have an o`ring inside , if it is you could always screw the gauge into a male coupling with sealer and then into the female coupling. https://www.ebay.co.uk/i/273469852092?chn=ps
If I am wrong forgive me , I am old yerknow

That's a press right?
Did you put in that porta power fitting?
I would expect that fitting in a side port and a gauge adapter in top port

If the gauge fitting has a flat bottom a dowty ( if diameter fits) or a plain cope gasket will work just fine but there are dedicated metal seals for that.
