this is what happened today

First up, pickled eggs. Eggs are from my neighbor, custom pickling spice by me

Next up my first ever cake. Coconut Victoria Sponge with home made strawberry jam (thanks mum) and whipped cream

And finally, a soda bread with cheese onions and olives

I’ve had a good day today ........... playing in the kitchen

That sponge cake reminds me of the ones my mum used to make with Viota or Mary Baker cake mixes, just add water or milk and provide your own fillings.

It involved chicken stuffing and bacon rashers. Cheesy bechemel and cauliflower , crushed potatoes with Cajun seasoning, tender stem broccoli and parsnips, nearly forgot the Yorkies with mustard powder in the batter

Believe it or not Yorkies are a new thing for me, I started with measuring on scales, then moved to measuring in a jug, now I just do it, often I make the batter the night before and leave it in the fridge

The best Yorkie is made in the same pan as the meat, with the fat from the meat, proper yummy. Nothing else required apart from a splash of Gravey.

I gauge the flour to size of egg, adding milk to suit, pinch of salt. Let it stand while oil and tray is heating up, quick mix adding milk if needed, and in to the tray Without delay, ensuring the oven temp dont drop. Top tray 220c, cook to taste. Or in my case then they are touching the top of the oven. You watch next lot in make with be 10mm thick

Baby Maris piper potatoes, boiled until soft (skin on). Then drain and gently toss in oil, sprinkle with Cajun seasoning. Transfer to tray, lightly crush with fork and roast like normal.

You get soft bits, chewey bits and crunchy bits all very tasty bits

Victoria sponge? The only time I tried to bake one, using a recipe provided by a life-long friend [now sadly no longer with us] it was an unqualified failure.
She was a brilliant baker and assured it was so simple, even I could do it. Huh!! I produced two Frisbees......

Haven't tried again, but one day..........

Oh, I had all the ingredients listed and a 'method statement' in writing from her and it DID look all too easy - I still managed to make a backside of it.
