That foil backed foam is horrible to work with. It saws nicely but the dust from it has static and sticks to everything and goes all over.
Are you using the boat in winter? If not, you have went mad with the insulation
Boats are like houses with doing up. Worst thing is that there is no real money in boats now for resale and residuals.
You can seal or paint any spray foam once cured and shaped. It may help seal it.

I have a fair amount of used chandlery items tucked away if you need any bits and bobs.
You need a Bahco insulation saw, its a panel saw with a wavy razor sharp knife edge, no dust, perfect straight cuts.

Just got a some down lights in, havent sorted them out yet though.
Don't use used morse cables, they can snap if old, leave you in full throttle heading toward somewhere you dont want to go.
Used porta potties stink, unless you strip it down and hot pressure wash all the bits, and you dont want to ever look inside one, avoid.
There is a van ply lining company round my way that chucks out huge ammounts of nice ply, offcuts, and used linings that are gash on one side but perfect on the other, you might have one near you if you want free ply.
Don't use diy chain store cheap ply for boats though, it delaminates in no time.
