versatility would be MIG for my choice, its fast to tack up jobs, loads less smoky than stick, can be switched to fluxcore for outside work, can do stainless-had a very quick go at that using without changing shielding gas-pretty good.
I have never done it yet but you could have a go at aluminium.
If you put me on the spot and limited me to two processes, I'd go for MIG and stick. I have AC/DC TIG now,I'm slowly getting to grips with it, it can be very frustrating and you can produce some super looking welds with it-and there is the rub-you can get sucked into the pursuit of the stack of dimes beads and stuff instead of cracking on and fusing metal together.
