The first is for grinding on the side and the others on the edge. You could use any of them free-hand and 120 is a pretty good grit for putting an edge on a drill IMO. If you're doing 4-facet with a jig I'd be more inclined to use the first as setting the angles on a flat face is easy.

There is a standard coding scheme for grinding wheels so that all the letters and numbers you see on the wheel mean something (same as E7018 for electrodes). I think somewhere 'out there' is a Norton Toolroom Grinding handbook that has the decoding info. in it. What I do not know is if that scheme is still in use. If the codes have changed, you might need both versions as the wheel may be in old money and you need to find an equivalent in new money.
