If possible it would have been better to drill through the plate, then weld on the nuts as you did do. then weld through the hole onto the end of the screwed rod,

Update... These have now been used, and were great. Stood up to pellets hitting them at over 300 feet per second, and made a nice solid "Ting"
We even tried bending the bar, and no cracks around welds.

It is hard to balance getting enough heat in and melting away the threaded bar where it joins the weld. You can control the undercutting by changing where you are feeding the wire in. If you bias it to the plate enough heat will wash up the bolt and melt it in enough. Basicaly what I meant before is not enough heat into the plate and too much on the bolt. Obviously work well though!! =)
the bolt will look undercut there is no way you will not destroy the thread straight away
