Cold rolled is easier to form, has a better surface finish, tighter tolerance, so ideal for mass production- machinery doesnt need reseting as often.
Hot rolled is slightly cheaper, general purpose stuff to construction, industrial uses mostly.

I beleive cold rolled stops at 3mm.
3mm is the thickest sheet, anything thicker than 3mm is classed as plate.
If you want the scale free properties from hot rolled, youl need to get HRP&O (Hot rolled, pickled and oiled)
Not as easy to get hold of, and not much benifit unless your running it through laser cutters etc.
Theres no guarantee of how flat a sheet/plate will be. It depends on how its been stacked and handled. We often get 25mm+ in thats not flat.
For a bench top, id be inclined to make a nice flat frame to stitch the sheet too.
But 6mm should be adequate for moderate use, not heavy hammering though.

There are British Standard guidlines for steel section, sheet and plate stating tolerances that they must be manufactured within. Had a few sections that were delivered to us that were like bananas. Usual story from the supplier - they are within tolerance mate. Quick reference to BS and the steel was swapped. Now we never get anything thats bend/twisted. They just try it on sometimes.

Lost count of the number of times something comes back from the galvanisers that has been bashed or damaged. You ring them up fuming and they say in a matter of fact sort of way, oh..it's the forklift drivers, they don't care. they smash them into the side of the tank, or whatever... Bill us for it and send us another one.
So thats time wasted, a customer let down, next job suffers. Last bill i sent them was for £3,500. It was a set of gates they damaged. My costs were no where near what the bill was but i wanted to hurt them. They paid £2000 in the end. I asked why they didnt sack the forklift driver - oh, it's the bosses son!
Never used them again. Or... you send the lads to pick gear up from the galvanisers, then go straight to a job with it to fit. Phone goes, my lad from the galvanisers...er i've got 7 out of the 8 you sent. What shall i do. Thing is without the eighth, can't fit the others, so it's two wages down the pan....They say, oh, we'll send it on when we find it. I always take photographs before stuff goes to the galvanisers now to prove damage was done by them.

They deliver to us via sideloader 
What galv's do you use? We used to use Eastleigh, Wedge group. Stuff kept getting lost, bent, crap job....
Use Cardiff ones now, an independant, so they seem to care a lot more. Much nicer job. Offer better delivery and collection, as well as blasting, powder coat....
The other one we use is Telford, nice big tank
