It's all to do with the rapidly forming oxide layer. If you can form a bubble of molten solder on the surface of the aluminium, and scratch away the oxide using an immersed tool you can feed the puddle which will grow across the surface under the oxide layer. Quite odd to watch, but as aluminium is such a good heat conductor keeping the puddle molten can be a challenge.
