Santa brought a shiny new Clarke 130EN with gas conversion kit and a Parweld mask. shopping around for some gas (any suggestions). Looking forward to my first ever welding session but... what should I practise on?

Look around the forum as gas options is discussed rather often. As to what to practise on, something thick, then as you get the hang of that go thinner. Say 2-3mm steel will give you some good practise on holding the torch steady, working out travel speed, holding the torch the right distance from material etc. Trying to learn on 1mm steel is the wrong way to start.
Apart from that, practise, practise, practise. Also check out all the tutorials on this forum as you'll learn a lot. Then get out the welder.
