Going off on a tangent slightly, but anyone went down the ceramic route? Something like this.
One of the worst knives i've had for sharpening was a Sabatier, this was years ago when they were supposed to be the mutts nutts.

Surely they're more brittle than steel and they won't bend, they'll just snap, how can that be better?

Good point. But sometimes, I do notice it flexing slightly.If you need to bend a knife blade, you're using the wrong tool (or you're Mrs Robo trying to use it as a screwdriver/chisel/pry-bar )
