Kitchen sanitary tables

Hello, I’ve been approached to make some industrial kitchen prep tables. Im thinking the cost may be substantial, im going to use 316. What are the regulations involved with regards to height, folds ect. Do you need to sign off this type of work? Or work to guidelines? When I looked at what they had it was only tacked together, and the previous welder that came even tried to mig it with mild steel and got chucked out ‍

I’ve been trying to find the uk regulations but keep finding the American fda regulations, I’m think of just parting ways and letting it be, might be a nightmare job...
