I was wondering something like that ,ok for octopus salad, but not ok for Carignano ,should be used white wines with fish and other sea food

Yes, that's the 'accepted' combination, but really you can drink which you like with what you like. There's quite a lot of 'wine snobbery' [not aimed at you personally
] surrounding food and wine these days.
The Wine Police won't raid your house if you break the 'rules'.

Ok to be hospital but the hospit has also be happy with what the house owner can offer to him

I think that our hospitals aren't too much different than yoursMaybe Italian hospitals are more hospitable than British ones
