They're very good just peeled, sliced and then done in the air fryer with a little olive oil. The golden beet come out really nice as they're quite sweet when roasted.

Is that straight from the ground, or after the rigmarole Daph posted?

I just wash the dirt off, peel and then dice into roughly 15mm cubes. Then just into the air fryer with a little olive oil (just a drizzle). Usually I cook at 180C...after 15mins they're going soft...done after 25mins (to my liking).

The golden beets are my favourites but works the same for all beets. I'll do a pic for my next batch.

Not having an air fryer, could I put them in a fan oven or fry them in Olive oil?

I've done them in the oven too and they've also been great. You don't need a lot of oil...just a little to coat them. In the oven you can cut into bigger pieces....I only do the small cubes as I want them to cook in the same time as my other stuff.
