I think most are actually 300 degrees, but can be anything from 270 to a full 360(or anything else, they seem to come in a huge variety if you are willing to pay the price for them), though they are generally referred to as 1 turn. For finer applications 5 or 10 turn pots give greater control.

The pictures show the switch mechanism. Is there a potentiometer lurking behind the other side of the rotary control?

These controls are usually bespoke mouldings by the manufacturer or made to their spec, so getting a suitable potentiometer which will be an easy fit is likely to be difficult. Having said that, it may be possible to fit an edge type pot into the side cheek of the switch and modify the recess in which the switch contacts are presently located so that it engages with the edge pot or drill out the existing edge control to take the spindle of a normal pot although I suspect it will be relatively easy to break after the mod.
