Curry night - chicken korma -remote cooking

A friend of mine in Australia has never tried Indian food . So as a treat for his Sheila I've done this for him .

I've sent him the spices he will need already along with a 'Bruce's guide' in how to cook it step by step , picture by picture as I cook/ed it tonight for tea so he can cook it tomorrow .

It's a restraunt style korma ( dippy sauce to mop your naan up with ).

Would anyone like a remote korma lesson ? (I love cooking curries )

Crack on, I love a curry. Perhaps a tad hotter than a Korma but not one that will induce ring sting

Chicken marinade (assuming 2 breasts )

Ideally marinade for a bit .... But works equally well on the hoof

1 teaspoon turmeric powder

2 teaspoon mild/hot chilli powder ( as you like it )

2 tablespoon coriander powder

1 tablespoon cumin powder

1 teaspoon Gram Massala

1 teaspoon salt ( more to taste )

1 teaspoon pepper



For the sauce

2 x Big onions

1/2 ginger to garlic , 6 cloves of garlic ( usual ratio is 50/50 bit I prefer more garlic )

1 decent sized chilli ( de-seeded if you don't like heat )

5/6 tomatoes (quartered )

Cup and a half ( 375 ml ) of plain yoghurt

Cup and a half (375 ml ) of water

Tablespoon of ground almonds

Tablespoon of desicated coconut


For final frying off in hot oil to flavour it up

4 cloves

2 bay leaves

2 inch / 1/2 stick of cinnamon

2 cardomon pods

1 star anise (aniseed Flavour so don't add don't like )

7/8 whole peppercorns

For the sauce fry this off chopped like that ......

Next the garlic and chilli gets rough chopped... With the onions already sliced and frying gently

Once the onions begin turning colour add them into the pan to cook out

Add all this along with the cooked tomatoes to a blender

Add the yoghurt and water and blend to a pulp

Spices just starting to catch colour means it's time for the sauce we did earlier to be added ...

Needs to simmer now for 20-30 mins (till either chickens cooked or sauce is thickened to your liking )
