I am bolting two sides of a norton crankshaft to a central flywheel and have been told that aircraft grade high tensile ones are the way to go.

"aircraft grade" always makes me chuckle when I see it in adverts or posts or it's mentioned in a conversation. It means nothing.
Most things "aircraft" have a very strict standard and every nut and bolt will need to meet that standard and has to be proven to do so. For a given application the standard might be exactly the same as for a 5 pence BZP 8.8 set screw that you could buy in any hardware place. The difference is that in the aircraft industry they will require such a guarantee from the manufacturer that each and every bolt in the box will be within that standard that they will have to pay a pound each for them.

I spent a few years in the aircraft business. Maintaining light twins and a lot of tube and fabric rebuilds.
Opened a box of castillated nuts, usual paper work and price to match. One was not threaded and another was threaded at 60deg off centre.
Had the undercarriage motor burn out coming into land at Southend. Found out later it was a Pontiac seat motor, just a/c approved and priced.
Still, when the wings are held on with a couple of 3/8" bolts, it helps if they are well made.

I intercepted some nice-looking nuts'n'bolts that were about to be lobbed in a skip: they'd been used in an engine rebuild aboard one of HM destroyers. I asked why they weren't simply being returned to stores and the reply was that once the box is opened, it has to be either used or scrapped - even if no parts are removed
Still, when you have taxpayers' money to play with...![]()
And yet I watched a program about mystery aviation crashes and on one British airline aircraft, it wasn't BA, a fitter had fitted a new windscreen using incorrect bolts !! Windscreen fitment is critical and it's no surprise it blew out and caused a big hole to be ripped in the side of the aircraft, amazingly the pilot managed to get it down with loss of life or serious injury !
