At work we only keep 12.9, no chance of anyone using anything of a lower strength that way. I've found that most of the critical bolts on the MK2 Golf I'm restoring are 10.9.
Yes, I knew about M10 x 1.5, M10 x 1.25 and M10 x 1.00, but you'd have to be really unlucky to have a bolt that's M10 x 0.75... I've never encountered one. The finer the pitch, the smaller the number. The number is the width in mm of the thread pitch, so with an M10 x 1.00, it will take ten full turns of a bolt to move 10mm on the thread (i.e. each full turn is 1 mm on the thread)
