tungsten contamination? have you been sharpening them on a dirty wheel used for grinding other material?
gas contamination? any leaks on the gas system drawing air in?
have you tried a different tungsten?
Is there sufficient tungsten carbide left on your worn blades to have them sharpened? I know the Evolution blades have a tendency to chip teeth but if your blades aren't damaged you might be able to get a bit more use out of them by sharpening.
well not really true, think I have done 3 hours or so practice mostly spent sharpeningtungstens

City Saw Services here in Norwich have one on their counter.
They mark every saw blade going in for sharpening with the customers details so there is no confusion.
I would hazard a guess that you will be spending more time on the grinder sharpening your tungstens than actual welding - at least that's how it felt to me. I don't think a dedicated wheel is necessary although some say the impurities from other materials being ground on the wheel will latch...
as said above you are jumping into the deep end on 1 mm but get some 2or3mm stainless and get your practice holding a puddle and feeding your filler rod .

I’d look at how your sharpening your tungsten are you getting a nice point chamfer roughly 2.5 ya 3 times your tungsten diameter .
Also are you in a comfortable position on welds that short rest bottom of your hand or wrist on solid area to help with steady position
