Actually, tapered gibs are not as complicated as they look. There aren't any compound angles on them, all but two of the sides are parallel - they just look complicated to the eye. Scraping them in isn't at all difficult either and you only have to scrape one side out of the four long ones. You just blue the table way, tap in the gib, tap it out and then scrape off the blue - easy as pie. With only 1 thou droop I doubt your machine needs any of that though it does kinda beg the question why did someone choose to fly-cut it in the first place.
That's all very well and good but if you grind the bottom of the bed, you have to grind the gib and it is a complicated piece which is why that would cost £200 on its own.
The bed is battle scarred so I guess it must have had such a bad track in it you couldn't bolt a vice on it. You'll see when I unveil the table; it looks like the dark side of the moon.
