Old jeans are perfect. I strop on the jeans I am wearing in the workshop on my leg 
To sharpen them I hold the knife with the edge pointing in the direction of belt travel (towards the floor). Slack belt (no platen), alternate sides maybe three passes each on a 320 grit belt then just strop on my jeans. They always come out paper cutting and hair shaving sharp with no burr. If I want a more polished edge I will move up the grades 600 then 1000.
J Neilson did a great video on this years ago where I learnt to strop on my jeans.

My ex father in law was a carpenter and used to strop his chisels on the palm of his hand, I nearly $%!T myself the first time I saw him do it, he was as quick as a butcher sharpening a knife on a steel and his chisels were like razors. I use a bit of old chrome leather on a piece of wood with nothing on, but jewelers rouge would make it better.

Some time later:
One bevel done. Time to flip the knife around and do the other side. Does anyone know roughly what grit a second cut file would be? A 2 x 48 belt grinder would be nice.
You can see a few tools here, (not the one holding the camera). My bench drill (A Continental International), Clarke welder and the end of Coronet Minor lathe.

If anyone wants some plans for my grinder I can draw them up with a cut list. Might take me some time and I am thinking about making a mark 2 version anyway.

@h-dom I tried a tanto folder using the filing jig.
Right until the end of the process; filing the tip bevel, I thought it was beyond me. Then it all just came together. Fascinating blades. That folder had a spring loaded lock and release that worked but was way heavy. I will revisit the tanto blade once I have come up with a system of cutting an accurate slot through a piece of wood.
I want to make Opinel style knives with a few different blade patterns. I am going to use discarded gas canisters that some local fools seem to use a lot of. They are the perfect size!

@VeryFEDUP that is amazing!! I haven't looked into folders yet, I'm sure if I look into the mechanism they will be ok but I feel they are beyond me without a lot of practice and research. That was the first tanto tip I have ever made, freehand on the grinder no jigs. I found it quite simple and didn't run into any issues. I probably had about 3 hours in that knife all done and finished.

Making a grinder is well worth the effort............i don't use mine for knives .........mainly ripping lots of metal off stuff quickly, much easier than a 4 1/2 grinder.
This is a jig for getting two angles on tubing......used to do it in the milling machine and it would take half a day doing 20 tubes............now takes 1/2 hour.
