i've used similar: they work.
theyre a variation on a "bending fork" which has been used by blacksmiths for *evver*
the vice doesnt supply the bending pressure, btw: it just holds the jig.

This appeals to me as it can be adjusted to suit different bar diameters, also if I keep one pin fixed diameter and for the other one make different sized dies I can make differing sized radi bends.

yes.
although you dont neccesarily need different sized dies for different radii: lots of little bends, rather than one big bend.
About 9 mins into the video Yamhon links to is the situation with additional dies, exactly what I need
