I realised as I watched this back that I need to get a decent weld going so the current will stabilise. It did get down to the 50A mark but wonder if it'll go lower. Maybe less wire speed and some thinner steel?
Once I had all the above done, I tried my hand at making a simple patch panel for the passenger side and ordered a repair panel from D W Engineering to cut to size and fit the drivers side. This is where my video series really kicks in... Here's the link to the playlist if you want to watch...

I didn't have a big budget due to just buying our first house but could stretch a few hundred quid for something gassy and miggy. maybe too much research later and I settled on this MIG/ARC...

Any recommendations on thickness of steel? I have some scrap in the shed still that is only .5mm so pretty thin, I could do one for a maximum current too on something like 4-5mm?

I can highly recommend the Rohr MIG-200MI if you're just doing little project. I got it as a beginner to welding and have had great success with it welding on my Peugeot 106 adn making a friend a trolley from 75x75mm box section (2.5mm wall thickness) Have a look for my threads, you can see how...
I don't have any local welding suppliers that want to sell anything less than £1500 so Amazon was my only real option. At least I know if it develops a fault, I'll get a return label and send it back with no issues. I'd have much preferred to shop local but i really didn't have the budget.
