I think a cheap PWM controller would work very well in your application. Why are you looking for a 60A constant current source if your PSU has an 8A rating, though?

Oh, yes. The pot has been cleaned many times since. There's no visible trace of the original "event" but food keeps sticking to that spot. Pasta sauce is probably the worst offender. I'm guessing it's because of the sugars, but I really don't know the root cause.

A decent secondhand Roland and Inkscape (free) software is my suggestion. I think you'd have to spend a lot of cash to buy anything capable of cutting gaskets - a laser cutter would probably be a better option for that.
