its stainless isn't it? as sip free says it does look like something for use on a rib, i presume one squeezes the two steel sides rto release the knife from its holder?
the blades are d2 heat treated and cryogenicly treated i made a grinder with vfd speed control and 2'' wide belts, I just do it for fun,its like all of my hobbies a good way to spend money:doh:
i bought a knife kit once about 4 years ago just for the laugh,i just threw it in the bin, maybe they've improved but i doubt it, i started with files and a vise, first knife i made was a lockback whittler, took me over a week but you really learn when you do everything yourself, there is a lot...
these are made from d2. they stay sharp a long time lol, i keep them sharp with carbide hones, i was using the steak knife with a cheap fork the other day and cut a piece out of the fork by accident lol

They are just the nicest little machines,mine is in the kitchen on its own work bench,that's the kind of house I live in I would greatly appreciate pictures of the respective dials because I'm not sure mine are correct
