You need the guides that go down the valve guides and the holder/handle as well as the cutters. 3 angle seats usually work better than grinding, as there less chance of making the short radius too tight, which is very detrimental to flow.
Did you watch that video I linked to earlier ? Are you getting a Arc or is it stuck in High Frequency start mode.

You want to be around 80amps on 3mm S/S, the main problem you've got is your speed.
You really need to get a move on with stainless don't worry though that will just come with practice.
