Adrian Flux, and Footman James specialize in classic insurance and arent right bothered about mods, I know I have a land rover with a range rover engine, discovery axles and a load of other stuff, and the insurance is less then 200 quid, the same as the original land rover.
The only thing to worry about is dvla, they have a points scoring system on bits you change, over a certain score and you lose the reg, you have to have a q plate, but if you look at the mods to my landy you can do a fair bit before that happens.
