I have experience of the grill pan handle from a shop perspective.
I have witnessed the following within my shop during the last 20 years.
Grill pan used to be full depth, with optional handle that could be attached.
Manufacturers change design to grilling with door closed ( for better ratings on energy efficiency and less cooking of vinyl doors directly above the built in oven )
Grill pan made shallower depth, handle becomes slide on option and has no method of fixing. Clients meant to use handle only when placing tray in and out of oven cavity.
I had more than one client report to me that the handle becomes dangerously hot when left on the grill pan under a grill at full power @!@!@ ( I had assumed no one would grab a handle left on my mistake, I was wrong ).
Manufacturers remove optional handle and return grill pan to full depth. Still grill with door closed.
