The foundation blocks for my tractor shed, which is portal frame, were also about a metre cube, and got the frame bolted down to cast in studs within days, but the studs were loose with a plate on their lower end, and grouted in when all was aligned.

That's an old wives tale. I drilled a bunch of 6" holes through 12 metres of concrete into an underground military bunker, and I can tell you that it was all cured solid right the way through.

And then it starts to degrade , those Romans had their own mix which included flyash and that is still good 2000 years later.

cant lose with answers like thatIt's a chemical process, so you'd have to define what your idea of 'cured' would be. Perhaps their take on it is that all the time there was heat being generated (or stored) the curing process was still underway. Can't argue with that but it doesn't mean that the concrete is not up to strength, just that there's still some heat stored in there from the sheer mass, or that even if there was only a fraction of a percent of 'curing' to remain is still enough to generate heat in the structure due to that enormous mass. You couldn't call it technically 'cured', but realistically you couldn't call it not.

The Chinese can predate the Romans with their concrete , made with urine , ground up burnt bones and rice water etc . it's been found to be still viable in parts of the Great Wall in areas that were started being constructed about 775 years BC.And then it starts to degrade , those Romans had their own mix which included flyash and that is still good 2000 years later.
