When I converted my barn, when I'd replaced the asbestos reinforced roof sheeting with fibre reinforced, I had 75 mm of foam sprayed on the ceilings and 100 mm on the walls overlaid with 18 mm OSB3 so that I could mount shelves and cupboards etc - I'd already embodied 100 mm under the 6" concrete floor slab. It means that the heat loss is not too great and I installed fan blown radiators off an oil fired combi boiler so I also have hot water at the sink.
When I built my woodwork shed, I used double skinned profile sheeting with 100 mm insulation between for the roof and it went on quickly and is very effective. Walls were timber clad with membrane and rockwool, but no heating, so I still get condensation on the large cast iron machines.
